BOMB CAKE POPS!

GET PREPPED FOR HALF TERM: DAY 1
As part of our get prepped for half term campaign we bring you this fantastic cake pop recipe to do with the kids as a fun project, with (hopefully) edible results!
This project actually covers two days, as the cake needs to chill overnight. If you only have one day spare to complete them with the children then make sure you prep your sponge the night before to make the pops the next day!

For the sponge:
100g Plain white flour
20g Cocoa powder
140g Caster sugar
40g Unsalted butter
Salt
1 1/2 tsp baking powder
120ml Milk
1 Egg
1/4 tsp Vanilla extract
For the buttercream:
125g Unsalted butter
1 tsp Vanilla extract
300g Icing sugar
2 tsp Milk
For the covering:
400g Dark chocolate
Other items:
Strawberry wands
Paper cake cases
Cake pop sticks, Lollypop sticks or similar
To make the sponge:
Preheat the oven to 170°C and prepare a muffin or cake tin with 12 paper cases.
Put the flour, cocoa powder, sugar, baking powder, salt and butter into a bowl and mix with an electric mixer until the consistency is sandy.
Whisk the milk, egg and vanilla extract in a jug then slowly add the flour and beat until smooth.
Spoon the mixture into the paper cases and bake for 20-25 minutes until the sponge bounces back to the touch.
Cool on a wire rack, leave in the fridge overnight to stale.
To make the frosting:
Put the butter in a large bowl and cream using a hand held electric whisk, then add the icing sugar a bit at a time, mixing in between. Add the milk and vanilla extract and whisk until fluffy.
Remove the cakes from the fridge and crumble into a large bowl until it resembles fine breadcrumbs, then mix in some frosting until the mixture can be formed into small balls.
Make balls of the mixture by rolling between your hands and place on a baking tray. Place these in the fridge to set for 30mins. Next melt your chocolate.
Dip a lollypop stick into your melted chocolate and then place it into the cake ball. Once you have a stick in every ball dip each one into the chocolate to cover the entire ball, before the chocolate starts to set, add about an inch of strawberry wand to the top of each ball to complete the bomb! (you can also dip the other end of the wand into chocolate and then into some edible glitter to give an explosion affect).
Leave to set (if you don't have a cake pop holder, then blu-tack works just as well!).
